This week we are sharing our favorite 15-minute recipe. That is easy for me, because even though I love to cook, I just don’t have the time. So quicker is always better in my book!
This recipe is one that my great grandmother shared and one that is always a hit. I hope you enjoy it!
MICROWAVE CHICKEN CASSEROLE
1 large can Campbell’s Cream of Chicken Soup
1 large cans of Chunk White Chicken, drained
1 cup of milk
1 can of peas
1/2 stick of butter or margarine
1 package of Stouffers Cornbread Stuffing
In a mixing bowl, stir together the milk and soup. Add the chicken and peas, mix well.
Place the butter in a bowl and melt in the microwave for 30 seconds, being sure to check it occasionally to prevent burning. Continue to cook for an additional 10 seconds until butter is melted.
In a separate bowl, coat the stuffing with the butter, making sure to combine it throughly.
Pour the chicken mixture into a 9×9 microwave-safe casserole dish and cover with lid or plastic wrap. Cook for 8 minutes, stirring occasionally.
Remove from microwave, top with cornbread stuffing mix and cook for an additional 5 minutes uncovered.
This is a great one-dish meal. It can be low-calorie by substituting fat-free Cream of Chicken Soup, skim milk, and chicken broth (for the butter).
